Mediterranean-Style Shrimp Scampi

Ingredients:

– 1 lb (450g) large shrimp, peeled and deveined
– Salt and freshly ground black pepper, to taste
– 3 tablespoons extra virgin olive oil
– 1 tablespoon unsalted butter
– 4-5 garlic cloves, minced
– 1/2 cup dry white wine (or chicken broth)
– Juice of 1 lemon
– Zest of 1 lemon
– 1/2 cup cherry tomatoes, halved
– 1/4 cup kalamata olives, pitted and sliced
– 1/4 cup capers, rinsed
– 1 teaspoon red pepper flakes (adjust to taste)
– 2 tablespoons fresh parsley, chopped
– 2 tablespoons fresh basil, chopped
– 1/2 cup feta cheese, crumbled (optional)
– Cooked pasta or crusty bread, for serving

Instructions:

1. Prepare the Shrimp: Season the shrimp with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 1-2 minutes on each side, or until they turn opaque and firm to the touch, but not hard like rubber. Remove the shrimp from the skillet and set aside.

2. Sauté the Garlic: In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter has melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

3. Deglaze the Pan: Pour in the white wine (or chicken broth) to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.

4. Add Flavors: Stir in the lemon juice, lemon zest, cherry tomatoes, kalamata olives, capers, and red pepper flakes. Cook for about 2 minutes, until the tomatoes start to soften.

5. Combine with Shrimp: Return the cooked shrimp to the skillet and toss to coat with the sauce. Cook for another 1-2 minutes, just until everything is heated through.

6. Garnish and Serve: Remove from heat and sprinkle with fresh parsley, basil, and crumbled feta cheese (if using). Adjust seasoning with salt and pepper to taste.

7. Serve: Serve the shrimp scampi over cooked pasta or with crusty bread to soak up the delicious sauce.
